Ingredients
- 2 tablespoons vegetable oil
- 1.5 lbs beef chuck, cut into 1-inch cubes
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 tablespoons Madras curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper (adjust to taste)
- 1 tablespoon tomato paste
- 1 (14 oz) can diced tomatoes
- 1/2 cup beef stock
- Salt and black pepper to taste
- 1 tablespoon lemon juice
Instructions
- In a cast iron pot or Dutch oven over medium heat, add vegetable oil. Sauté the chopped onion until translucent.
- Stir in minced garlic and grated ginger; cook until fragrant.
- Add beef chuck and brown on all sides.
- Sprinkle in Madras curry powder, cumin, coriander, turmeric, and cayenne pepper; stir to coat the beef evenly.
- Mix in tomato paste and then add diced tomatoes and beef stock.
- Season with salt and black pepper. Bring to a gentle simmer and cover. Cook on low heat for about an hour or until the beef is tender.
- Stir in lemon juice before serving hot with rice or bread.
