Instructions

- In another bowl, whisk together buttermilk, egg, green onions, and parsley.
- Pour the wet mixture into the dry ingredients and stir until just combined. Fold in crawfish tails.
- Heat vegetable oil in a deep fryer or skillet to 350°F (175°C).
- Drop spoonfuls of batter into hot oil and fry until golden brown (about 2-3 minutes). Drain on paper towels.
- For the dipping sauce: Mix mayonnaise, Dijon mustard, hot sauce, lemon juice, Creole seasoning, and parsley until smooth.
