  • 2 tablespoons Dijon mustard
  • 1 tablespoon hot sauce
  • 1 tablespoon lemon juice
  • 1 teaspoon Creole seasoning

Instructions

  1. In a large mixing bowl, combine cornmeal, flour, baking powder, salt, black pepper, cayenne pepper, and smoked paprika.
  2. In another bowl, whisk together buttermilk, egg, green onions, and parsley.
  3. Pour the wet mixture into the dry ingredients and stir until just combined. Fold in crawfish tails.
  4. Heat vegetable oil in a deep fryer or skillet to 350°F (175°C).
  5. Drop spoonfuls of batter into hot oil and fry until golden brown (about 2-3 minutes). Drain on paper towels.
  6. For the dipping sauce: Mix mayonnaise, Dijon mustard, hot sauce, lemon juice, Creole seasoning, and parsley until smooth.
