  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon chili powder (optional)
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup plain yogurt


Instructions

  1. Heat vegetable oil in a skillet over medium-high heat. Brown lamb chunks on all sides for about 5-7 minutes, then set aside.
  2. In the same skillet, sauté onions and garlic until translucent (about 5 minutes). Add grated ginger and cook for another minute.
  3. Stir in spices (curry powder, cumin, paprika, cinnamon, chili powder) and cook for an additional minute.
  4. Transfer the sautéed mixture to a slow cooker. Add browned lamb and diced tomatoes; stir to combine.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours. About 30 minutes before serving, stir in plain yogurt.
