Ingredients
- 2 tbsp oil
- 1 1/2 cup dried white kidney beans
- 1 1/2 cup dried romano beans
- 2 onions (finely diced)
- 2 carrots (shredded or diced)
- 4 cloves garlic (grated)
- 2 tbsp flour
- 1 tbsp smoked paprika
- Seasonings: salt, black pepper, and a bay leaf
Instructions
- Soak the dried beans in water for at least 6 hours, then drain and boil them in fresh water for about 20 minutes. Drain again.
- In a large pot, heat oil over medium heat and sauté the onions and carrots until soft.
- Add the prepared beans, bay leaf, and approximately 4 liters of water; simmer for 40-45 minutes.
- In a separate pan, cook garlic in oil, stir in flour and smoked paprika; add this mixture to the soup to thicken.
- Let simmer for another 5 minutes before serving hot.
