  • 1 small zucchini
  • 1 small summer squash
  • 1 large bell pepper
  • 1 tbsp. grapeseed oil
  • 1/2 tsp. oregano
  • 1/2 tsp. garlic powder
  • 1/2 tsp. paprika
  • 1/3 tsp. salt
  • 1/4 tsp. pepper
  • 1 tbsp. plant butter
  • 2 tbsp. chopped dill or parsley


Instructions

  1. Heat the grapeseed oil in a large non-stick skillet over medium-high heat.
  2. Add sliced carrots and cook for about 3 minutes until slightly softened.
  3. Stir in zucchini, summer squash, bell peppers, oregano, garlic powder, paprika, salt, and pepper; cover and cook for 5-7 minutes until veggies are tender.
  4. Turn off the heat and add plant butter on top; cover again to melt for about 1 minute.
  5. Stir in fresh herbs before serving warm.
