  • 4 large russet potatoes
  • ¾ teaspoon salt
  • ¾ cup sour cream
  • 1 lb. ground beef (85% lean)
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 3 Tablespoons salted butter
  • ¼ cup flour
  • 4 cups chicken broth
  • 2 cups half and half
  • 2 teaspoons Italian seasoning
  • ½ teaspoon mustard powder
  • ¼ teaspoon ground sage
  • 2 cups shredded cheddar cheese
  • 1 ½ cups mixed frozen vegetables
  • Salt and pepper, to taste


Instructions

  1. Boil water in a large pot. Peel and chop russet potatoes into chunks. Add them to boiling water with salt. Cook until tender (about 15 minutes). Drain well.
  2. Return drained potatoes to pot. Add sour cream. Use your potato masher to mash until smooth. Set aside.
  3. In your large pot over medium heat, melt salted butter. Add diced onion and minced garlic; sauté until soft (about 3 minutes). Add ground beef; cook until browned (about 5–7 minutes). Drain excess fat if necessary.
  4. Sprinkle flour over cooked beef mixture; stir well. Gradually add chicken broth while stirring constantly. Bring mixture to simmer.
  5. Stir in half and half along with Worcestershire sauce, Italian seasoning, mustard powder, ground sage, salt, and pepper. Cook until heated through (about 5 minutes).
  6. Add shredded cheddar cheese and mixed frozen vegetables into soup base. Stir until cheese melts completely.
  7. Serve hot by spooning mashed potatoes into bowls topped with Shepherd’s Pie Soup mixture.
