Ingredients
- 4 large russet potatoes
- 1 pound ground beef or lamb
- 1 small onion, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 cup beef broth
- ¾ cup frozen peas
- ½ cup milk
- 2 tablespoons butter
- Salt and black pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Scrub potatoes, dry them, prickle with a fork, rub with olive oil and salt.
- Bake for 45–50 minutes until tender.
- While baking, heat olive oil in a skillet over medium heat.
- Brown the ground meat; drain excess grease.
- Add onions, carrots, and garlic; cook until softened.
- Stir in tomato paste, Worcestershire sauce, thyme, rosemary, salt, pepper; pour in beef broth and simmer for 10 minutes.
- Mix in frozen peas; remove from heat.
- Slice tops off baked potatoes; scoop out flesh into a bowl.
- Mash with milk, butter, garlic powder, salt, pepper; stir in cheese if desired.
- Spoon filling into potatoes; top with mashed potato mixture.
- Bake again for 10–15 minutes until golden.
