  • 1 bunch asparagus (trimmed)
  • 4 tbsp butter (melted)
  • 3 cloves garlic (minced)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp lemon juice
  • 1 tsp Italian seasoning


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine melted butter, minced garlic, lemon juice, Italian seasoning, garlic powder, paprika, salt, and black pepper.
  3. Coat the chicken in the marinade and let it sit while preparing the vegetables.
  4. On a baking sheet, toss halved baby potatoes with olive oil and seasonings; arrange them on one side.
  5. Add broccoli florets and asparagus to the other side of the baking sheet; drizzle remaining marinade over everything.
  6. Bake for about 35 minutes until chicken is cooked through and veggies are tender.
