  • 1 carrot, peeled and diced
  • 1 celery stalk, diced
  • 1 tablespoon tomato paste

  • 1/2 teaspoon rosemary
  • Salt and pepper to taste
  • 1/2 cup beef or vegetable broth
  • 2 cups sweet potatoes (mashed)


Instructions

  1. Prepare the sweet potatoes by peeling and chopping them into even pieces. Boil in salted water until fork-tender, about 15-20 minutes.
  2. In a skillet over medium heat, add olive oil and sauté onions until translucent. Stir in garlic, carrots, and celery; cook for about 5 minutes.
  3. Add ground lamb to the skillet and cook until browned. Mix in tomato paste, herbs, salt, pepper, and broth. Simmer for about 10 minutes before adding frozen peas (if desired).
  4. Drain the cooked sweet potatoes and mash until smooth. Season with salt and pepper.
  5. Preheat the oven to 400°F (200°C). Spread the lamb filling in a baking dish and top with sweet potato mash.
  6. Bake for about 25-30 minutes or until golden on top.
