  • 7 ounces sweetened shredded coconut
  • 1 can dulce de leche (14 ounces)
  • 1 can sweetened condensed milk (14 ounces)
  • 1 box Nilla Wafer cookies, crushed (14 ounces, about 3 cups crushed)
  • 16 ounces Ghirardelli dark chocolate wafers


Instructions

  1. In a mixing bowl, combine shredded coconut, dulce de leche, sweetened condensed milk, and cookie crumbs. Stir until well mixed.
  2. Line a baking sheet with parchment paper. Scoop one tablespoon of the mixture onto the parchment paper until all is used. Freeze for about 30 minutes.
  3. Melt the Ghirardelli dark chocolate wafers according to package instructions (about 1½ minutes in the microwave).
  4. Dip the bottom of each frozen truffle into melted chocolate and return to parchment paper. Drizzle remaining chocolate over truffles before storing in an airtight container.
