  • 24 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1 cup granulated sugar (for caramel sauce)
  • 6 tbsp unsalted butter (for caramel sauce)
  • 1/2 cup heavy cream (for caramel sauce)
  • 1 tsp sea salt (for caramel sauce)


Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into a 9-inch springform pan and bake for 10 minutes.
  3. Combine sliced apples with brown sugar, cinnamon, and flour; spread over the cooled crust.
  4. Beat cream cheese and sugar until smooth, then add eggs one at a time along with vanilla and sour cream. Pour over the apples.
  5. Bake for 60-70 minutes until slightly jiggly in the center. Cool at room temperature before refrigerating for at least 4 hours.
  6. For the salted caramel sauce, melt sugar until amber, then stir in butter and heavy cream until smooth; add sea salt.
  7. Drizzle caramel over chilled cheesecake before serving.
