  • 400g chicken thighs, cut into bite-size pieces
  • 1 cup cornstarch
  • 1 tsp baking powder
  • 1 onion, diced
  • 2 red Thai chilies, chopped
  • 3 garlic cloves, finely chopped
  • Vegetable oil for frying
  • 1 tbsp light soy sauce
  • 1 tbsp Chinese cooking apple vinegar
  • 1 tbsp grated garlic
  • 1 tbsp Sichuan peppercorns
  • 1 tbsp black peppercorns
  • 1 tbsp sea salt


Instructions

  1. Marinate chicken with light soy sauce, apple vinegar, and grated garlic for 15 minutes.
  2. Toast Sichuan and black peppercorns in a dry pan until fragrant; grind and mix with sea salt.
  3. Coat marinated chicken in a mixture of cornstarch and baking powder.
  4. In hot oil (around 350°F), fry chicken pieces in batches until golden brown.
  5. Stir-fry garlic and onion in vegetable oil; add chilies and green onions.
  6. Toss fried chicken with the prepared spice mix before serving.
