Ingredients

  • 1 salmon fillet (about 150g)
  • 2 eggs, whisked
  • 1 cup cherry tomatoes
  • 1 cup asparagus spears, trimmed
  • 5-6 button mushrooms
  • Olive oil or butter for cooking
  • Salt & black pepper to taste
  • Optional: garlic powder, chili flakes, lemon juice


Instructions

  1. Season the salmon fillet with salt and pepper. Sear in a skillet with olive oil over medium heat for 3-4 minutes on each side until golden brown. Remove and keep warm.
  2. In the same skillet, add mushrooms and sauté for 4-5 minutes until browned; season with salt.
  3. Add asparagus to the skillet and sauté for another 2-3 minutes until bright green.
  4. In a separate pan, scramble the whisked eggs over medium-low heat until just set.
  5. Roast cherry tomatoes in a hot pan or oven until blistered.
  6. Assemble all ingredients in a bowl and serve warm.
