  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt
  • Vegetable oil (for frying)
  • 1 lb sushi-grade salmon
  • 4 tbsp Kewpie mayo
  • 2 tbsp Sriracha
  • 2 tbsp scallion (for garnish)
  • Sliced avocado (for garnish)
  • Thinly sliced jalapeno (for garnish)
  • Soy sauce and sesame oil (for drizzling)
  • Toasted black and white sesame seeds (for garnish)


Instructions

  1. In a bowl, mix rice vinegar, sugar, and salt until dissolved. Combine with cooked sushi rice.
  2. Spread the mixture in a baking pan lined with plastic wrap, press evenly, and refrigerate for at least 4 hours or overnight.
  3. Heat vegetable oil in a non-stick frying pan over medium heat. Cut chilled rice into squares and fry until golden brown on both sides.
  4. Assemble by topping each crispy rice piece with slices of salmon, drizzling with Kewpie mayo mixed with Sriracha, and garnishing with scallions, avocado, jalapenos, soy sauce, sesame oil, and toasted sesame seeds.
