- 1 sprig fresh rosemary
- 2 sprigs fresh thyme
- 1 bay leaf

- 2 cups chopped spinach or kale
- 1 tablespoon lemon juice
Instructions
- In a large pot, heat olive oil over medium heat. Sauté chopped onion, diced carrots, and diced celery for 8–10 minutes until soft.
- Add minced garlic and tomato paste; cook for 1–2 minutes until fragrant.
- Stir in cannellini beans, vegetable broth, rosemary, thyme, bay leaf, salt, and black pepper. Bring to a gentle boil.
- Reduce heat and simmer uncovered for 20–25 minutes to meld flavors.
- Add chopped spinach or kale during the last few minutes of cooking until wilted.
