Ingredients

  • 4 thick slices sourdough bread
  • Olive oil for brushing
  • Flaky sea salt for finishing
  • 2 burrata balls (room temperature)
  • 300g (2 cups) fresh dark cherries, pitted
  • 2 tbsp aged balsamic vinegar
  • 2 tsp honey or maple syrup
  • Fresh thyme leaves (optional)


Instructions

  1. Preheat your oven to 200C (400F).
  2. In a baking dish, toss pitted cherries with aged balsamic vinegar and honey or maple syrup. Roast for 15-18 minutes until soft and syrupy.
  3. Brush both sides of sourdough slices with olive oil and toast in a skillet or broiler until golden brown; sprinkle with flaky sea salt.
  4. Assemble by placing warm toasted sourdough on plates, topping each with half a burrata ball, and spooning the roasted cherries over them.
  5. Drizzle extra balsamic over each toast and garnish with herbs if desired. Serve immediately.
