Instructions

  2. For the crust, combine graham cracker crumbs, sugar, and melted butter in a bowl. Press into a greased 9-inch springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
  4. Mix in cocoa powder, sour cream, buttermilk, vanilla extract, white vinegar, and red food coloring until well combined.
  5. Pour filling into crust and bake for about 10 minutes at 325°F (then reduce temperature to 300°F and bake for an additional hour and fifteen minutes). Allow cooling before removing from pan.
  6. For the topping, beat cream cheese with butter and powdered sugar until smooth; spread over cooled cheesecake.
