- 6 8-inch tortillas
- 1/2 cup granulated sugar
- 1 tsp ground cinnamon
- 1/3 cup melted butter
- 4 oz cream cheese (softened)
- 3/4 cup canned pumpkin puree
- 1/2 tsp vanilla extract
- 1 1/2 tsp pumpkin pie spice
- 1/2 cup heavy whipping cream
- 2 Tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
- Pecans for garnish (chopped)
Instructions
- Preheat your oven to 400°F. Use a cookie cutter to cut out rounds from each tortilla (about 20).
- Mix granulated sugar and ground cinnamon on a plate. Poke holes in each tortilla with a fork.
- Brush tortillas with melted butter and coat them in the cinnamon-sugar mixture.
- Arrange the tortillas between muffin cups on an upside-down muffin tin and bake for about 10 minutes until golden brown.
- While shells cool, beat heavy whipping cream with powdered sugar and vanilla until stiff peaks form.
- In another bowl, mix cream cheese, powdered sugar, pumpkin puree, vanilla extract, and pumpkin pie spice until smooth.
- Fill cooled taco shells with the pumpkin filling and top generously with whipped cream.
