- 1 cup walnuts, finely chopped
- 1 cup almond flour
- 1/2 cup white sugar
- 1/4 cup salted butter, melted
- 6 oz 100% pumpkin puree
- 2/3 cup white sugar
- 2 eggs
- 2 (8 oz) cream cheese, room temperature
- 1 tsp pumpkin spice
- 1/2 tsp cinnamon
- 1/3 cup white sugar
- 1/3 cup brown sugar
- 1/4 cup oats
- 1/2 cup flour
- 6 T salted butter, softened
- 1 tsp vanilla
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a mixing bowl, combine finely chopped walnuts, almond flour, white sugar, and melted butter for the crust. Press evenly into the bottom of the dish.
- Blend room temperature cream cheese with white sugar until smooth. Add eggs one at a time, mixing well.
