  • 1 cup almond flour
  • 1/2 cup white sugar

  • 6 oz 100% pumpkin puree
  • 2/3 cup white sugar
  • 2 eggs
  • 2 (8 oz) cream cheese, room temperature
  • 1 tsp pumpkin spice
  • 1/2 tsp cinnamon
  • 1/3 cup white sugar
  • 1/3 cup brown sugar
  • 1/4 cup oats
  • 1/2 cup flour
  • 6 T salted butter, softened
  • 1 tsp vanilla


Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a mixing bowl, combine finely chopped walnuts, almond flour, white sugar, and melted butter for the crust. Press evenly into the bottom of the dish.
  3. Blend room temperature cream cheese with white sugar until smooth. Add eggs one at a time, mixing well.
  4. Reserve part of this mixture; pour the rest over the crust. Mix pumpkin puree and spices into the reserved mixture before layering it on top of the cheesecake base.
  5. Prepare streusel by combining sugars, oats, flour, softened butter, and vanilla; sprinkle over the top layer.
  6. Bake for about 60-70 minutes until set and slightly golden. Cool before chilling for at least 2 hours before slicing.
