Instructions

  1. Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, pudding mix, baking soda, and salt; set aside.
  3. In another bowl, cream together brown sugar, granulated sugar, and softened butter until fluffy.
  4. Beat in egg and clear vanilla extract until well combined.
  5. Gradually mix dry ingredients into wet ingredients; add food coloring if desired.
  6. Fold in white chocolate chips and chopped pistachios; refrigerate dough for 30 minutes.
  7. Scoop tablespoon-sized portions onto the prepared baking sheet, spacing them two inches apart.
  8. Bake for 12 to 14 minutes or until set but not browned; press extra chocolate chips on top while warm.
  9. Allow cookies to cool on the baking sheet for several minutes before transferring them to a wire rack.
