Instructions

  1. 1. Preheat your oven to 350°F (175°C). Prepare three 8-inch round cake pans by greasing them and lining with parchment paper.
  2. 2. In a food processor, grind the pistachios until finely ground. Mix them with flour, baking powder, and salt in a bowl.
  3. 3. In another bowl, beat softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in milk, oil, vanilla extract, and optional almond extract.
  4. 4. Gently fold in the dry ingredients until just combined.
  5. 5. Divide batter among prepared pans and bake for 22–25 minutes or until a toothpick comes out clean. Cool completely on a wire rack.
  6. 6. For the mascarpone cream filling, whip heavy cream until soft peaks form. Fold in cold mascarpone cheese and powdered sugar until smooth.
  7. 7. Assemble the cake by layering with mascarpone cream between each layer and frosting the top and sides. Decorate with chopped pistachios.
