  • 1 box (3.4 oz) instant pistachio pudding mix
  • 4 eggs
  • 1/4 cup vegetable oil
  • 2 tbsp water
  • 1 cup sour cream
  • 3/4 cup maraschino cherries (halved)
  • For the Almond Glaze: 2 cups powdered sugar
  • 2-2.5 tbsp milk
  • 1 tsp almond extract


Instructions

  1. Preheat your oven to 350°F (175°C) and grease two small loaf pans.
  2. In a mixing bowl, combine the yellow cake mix and pistachio pudding mix. Add eggs, vegetable oil, water, and sour cream; beat until smooth.
  3. Drain and pat dry the maraschino cherries; fold them gently into the batter.
  4. Divide the batter between the prepared loaf pans and bake for 35-40 minutes or until a toothpick comes out clean.
  5. Cool on a wire rack before icing with a mixture of powdered sugar, milk, and almond extract.
