Instructions

  1. Preheat the oven to 325°F (165°C). Grease and flour a Bundt pan or tube pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  3. Add eggs one at a time, beating well after each addition. Stir in both vanilla and optional pineapple extract.
  4. In another bowl, whisk together all-purpose flour, baking powder, and salt.
  5. Gradually mix dry ingredients into the butter mixture alternately with sour cream until combined.
  6. Finally, fold in the drained crushed pineapple gently.
  7. Pour the batter into your prepared pan and smooth the top with a spatula.
  8. Bake for 75-85 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow cooling in the pan for about 15 minutes before inverting onto a wire rack to cool completely.
  10. In a bowl, whisk together powdered sugar with 2 tablespoons of reserved pineapple juice.
  11. Add more juice (or milk) gradually until you reach your desired consistency.
