- 1/2 cup mayonnaise

- 2 whole jalapeño chiles, roughly chopped

- 1 tablespoon fresh lemon or lime juice
- 1 cup jasmine rice
- 1 tablespoon butter or oil
- 1/4 cup onion, diced
- 2-3 garlic cloves, minced
- 1 teaspoon turmeric
- 1/4 teaspoon EACH cumin, onion powder, salt, pepper
- 2 cups chicken stock
- 1 cup frozen peas
Instructions
- Marinate the chicken with garlic, lime juice, olive oil, cumin, smoked paprika, salt, and pepper for at least 1 hour or overnight.
- Preheat the grill to medium-high heat or the oven to 450ºF.
- Cook the marinated chicken on the grill for 5–7 minutes per side or bake in the oven for about 30 minutes until internal temperature reaches 165ºF.
- Prepare the rice by sautéing onions and garlic in olive oil, adding rinsed jasmine rice and seasonings, then cooking it in chicken stock until fluffy.
- Blend cilantro, mayonnaise, jalapeños, garlic, olive oil, lime juice, salt, and pepper for the green sauce.
- Serve the rice topped with grilled chicken and drizzled with green sauce.
