  • 1/2 teaspoon freshly ground black pepper
  • 1 cup fresh cilantro leaves
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 whole jalapeño chiles, roughly chopped
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon or lime juice
  • 1 cup jasmine rice
  • 1 tablespoon butter or oil
  • 1/4 cup onion, diced
  • 2-3 garlic cloves, minced
  • 1 teaspoon turmeric
  • 1/4 teaspoon EACH cumin, onion powder, salt, pepper
  • 2 cups chicken stock
  • 1 cup frozen peas


Instructions

  1. Marinate the chicken with garlic, lime juice, olive oil, cumin, smoked paprika, salt, and pepper for at least 1 hour or overnight.
  2. Preheat the grill to medium-high heat or the oven to 450ºF.
  3. Cook the marinated chicken on the grill for 5–7 minutes per side or bake in the oven for about 30 minutes until internal temperature reaches 165ºF.
  4. Prepare the rice by sautéing onions and garlic in olive oil, adding rinsed jasmine rice and seasonings, then cooking it in chicken stock until fluffy.
  5. Blend cilantro, mayonnaise, jalapeños, garlic, olive oil, lime juice, salt, and pepper for the green sauce.
  6. Serve the rice topped with grilled chicken and drizzled with green sauce.
