Ingredients

  • 4 to 4 1/2 lbs peaches (about 14-18 medium)
  • ½ cup water
  • 4 cups granulated sugar


Instructions

  1. Rinse peaches under cool water, then blanch in boiling water for 30-60 seconds. Transfer to cold water to cool.
  2. Peel the blanched peaches by cutting them in half and removing the pits.
  3. Cut peaches into quarters and place them in a large saucepan with water. Simmer over medium heat until soft.
  4. Puree the mixture until smooth using a food processor or immersion blender.
  5. Return the peach pulp to the saucepan, add sugar, and stir until dissolved.
  6. Bring to a boil, then reduce heat and simmer until thickened enough to mound on a spoon.
  7. Ladle hot peach butter into prepared jars, ensuring at least ¼” headspace for safe canning.
