Ingredients
- 1 kg potatoes, scrubbed and boiled, peeled and diced
- 1 large red onion, thinly sliced
- 1 small bunch fresh parsley, finely chopped (about 1 cup packed)
- 1/2 bunch fresh mint, finely chopped (about 1/4 cup packed)
- 4 green onions, sliced
- 5 tablespoons extra virgin olive oil
- Juice of 2 lemons (about 3 tablespoons)
- 1 1/2 teaspoons fine salt
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon sumac
Instructions
- Place scrubbed potatoes in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook until tender (12–15 minutes).
- Drain the potatoes in a colander and let cool slightly before dicing into cubes.
- In a mixing bowl, combine diced potatoes with sliced red and green onions, chopped parsley, and mint.
- Drizzle olive oil and lemon juice over the mixture; season with salt, black pepper, and sumac.
- Gently toss the salad until well combined. Let rest for at least 15 minutes before serving.
