Ingredients
- 1 ½ pounds boneless, skinless chicken breasts
- 1 teaspoon garlic powder
- ¼ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon red pepper flakes
- 2 tablespoons olive oil (divided)
- ½ cup diced yellow onion
- 2 cups chopped fresh asparagus
- 1 tablespoon minced garlic
- 8 ounces dry orzo
- 2 ½ cups low sodium chicken broth
- 2 sprigs fresh thyme (or 1/4 teaspoon dried thyme)
- ⅓ cup half and half (or milk)
- ⅓ cup freshly grated parmesan
- 2 cups fresh spinach
- Chopped fresh parsley for garnish
Instructions
- In a small bowl, season chicken chunks with garlic powder, salt, pepper, and red pepper flakes.
- Heat olive oil in a large pan over medium-high heat and cook the seasoned chicken until browned. Set aside.
- In the same pan, sauté asparagus for about 2 minutes; remove and set aside with chicken.
- Add diced onion to the pan and cook until softened, then add orzo and minced garlic; sauté until slightly toasted.
- Pour in chicken broth, bring to a simmer, cover, and cook for about 7 minutes.
- Stir in the cooked chicken, asparagus, half-and-half, parmesan cheese, fresh spinach, and thyme; heat through.
- Serve immediately garnished with parsley and extra parmesan.
