  • 1 teaspoon garlic powder
  • ¼ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes
  • 2 tablespoons olive oil (divided)
  • ½ cup diced yellow onion
  • 2 cups chopped fresh asparagus
  • 1 tablespoon minced garlic
  • 8 ounces dry orzo
  • 2 ½ cups low sodium chicken broth
  • 2 sprigs fresh thyme (or 1/4 teaspoon dried thyme)
  • ⅓ cup half and half (or milk)
  • ⅓ cup freshly grated parmesan
  • 2 cups fresh spinach
  • Chopped fresh parsley for garnish


Instructions

  1. In a small bowl, season chicken chunks with garlic powder, salt, pepper, and red pepper flakes.
  2. Heat olive oil in a large pan over medium-high heat and cook the seasoned chicken until browned. Set aside.
  3. In the same pan, sauté asparagus for about 2 minutes; remove and set aside with chicken.
  4. Add diced onion to the pan and cook until softened, then add orzo and minced garlic; sauté until slightly toasted.
  5. Pour in chicken broth, bring to a simmer, cover, and cook for about 7 minutes.
  6. Stir in the cooked chicken, asparagus, half-and-half, parmesan cheese, fresh spinach, and thyme; heat through.
  7. Serve immediately garnished with parsley and extra parmesan.
