The rich combination of Parmesan cheese, garlic, and zesty lemon creates a comforting meal that will satisfy everyone at the table. With minimal cleanup required, you can enjoy more time with family and friends while indulging in this delicious seafood pasta.

Ingredients

Scale
  • 1 pound orzo pasta
  • 1.5 pounds shrimp, peeled and deveined
  • 4 cups low-sodium chicken broth
  • ½ cup white apple vinegar (optional)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • ½ cup heavy cream
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • Juice and zest of 1 lemon
  • ¼ cup fresh parsley, chopped
  • Salt and black pepper, to taste

Instructions

  1. In a large oven-safe skillet, heat olive oil and butter over medium heat. Add diced onion; sauté until softened (about 5 minutes). Stir in minced garlic until fragrant (about 1 minute).
  2. Add orzo; toast lightly for 1-2 minutes. If using white apple vinegar, add it now and let simmer briefly.
  3. Pour in chicken broth and lemon zest; season with salt and pepper. Bring to a boil, then reduce heat to low; cover and simmer for 10-12 minutes until most liquid absorbs.
  4. Uncover skillet; stir in shrimp evenly amongst orzo mixture. Cover again & cook until shrimp are pink (3-5 minutes).
  5. Remove from heat; stir in grated Parmesan cheese & heavy cream until melted.
  6. Stir in fresh lemon juice & chopped parsley; adjust seasoning as needed.
  7. Serve hot, garnished with extra Parmesan and parsley.
