  • 2 tablespoons olive oil

  • 2 teaspoons ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground turmeric
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper (optional, for heat)
  • 1 can (14 oz) diced tomatoes
  • 4 cups beef broth
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 3 large carrots, sliced
  • 1 red bell pepper, chopped
  • 1 zucchini, sliced

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the beef cubes on all sides for about 5-7 minutes, then set aside.
  2. In the same pot, sauté chopped onion for 5 minutes until softened. Add minced garlic and cook for an additional 1-2 minutes.
  3. Stir in ground cumin, coriander, cinnamon, turmeric, paprika, and cayenne pepper. Cook for 1-2 minutes while stirring constantly to toast the spices.
  4. Add the browned beef back into the pot along with diced tomatoes and beef broth. Bring to a boil, then reduce heat to low and cover. Simmer for about 1 hour.
  5. After an hour, add chickpeas, carrots, red bell pepper, and zucchini to the pot. Stir well to combine everything. Season with salt and pepper to taste.
  6. Cover again and continue simmering for an additional 30 minutes until vegetables are tender and flavors meld beautifully.
  7. Serve hot garnished with fresh cilantro or parsley if desired, alongside couscous or crusty bread.
