  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon fine table salt
  • 2 tablespoons holiday spice mix
  • 1/3 cup white sugar
  • 1 cup dried fruit blend
  • 1/2 cup candied mixed peel
  • 1 large egg
  • 1 cup buttermilk or plain yogurt
  • 3/8 cup melted butter
  • Non-melting sugar or powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it or lining with muffin liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, spice mix, and sugar until combined.
  3. Gently fold in the dried fruit blend and candied mixed peel.
  4. In another bowl, whisk together the egg, buttermilk (or yogurt), and melted butter until smooth.
  5. Pour the wet ingredients into the dry mixture and stir gently until just combined; avoid overmixing.
  6. Scoop the batter into the muffin tin, filling each cup three-quarters full.
  7. Bake for about 20 minutes or until golden brown and a toothpick inserted comes out clean.
  8. Allow muffins to cool slightly before transferring to a wire rack and dust with powdered sugar if desired.
