Ingredients
- 4 2/3 cups Rice Krispies Cereal
- 4 tablespoons salted butter
- 10 ounces vegan marshmallows
- 1 teaspoon peppermint extract
- Green food coloring (about 10 drops)
- 3/4 cup mini chocolate chips
Instructions
- Grease a large mixing bowl and pour in the Rice Krispies Cereal.
- In a medium-large saucepan over low heat, melt the butter.
- Stir in the vegan marshmallows until about three-quarters are melted; then remove from heat and mix until fully melted.
- Add peppermint extract and green food coloring to the mixture, stirring well.
- Pour the melted marshmallow mix over the cereal and combine until evenly coated.
- Allow to cool slightly for about 5-8 minutes before mixing in most of the chocolate chips (reserve some for topping).
- Spread into a greased 8-inch pan, pressing gently down, then sprinkle reserved chocolate chips on top.
- Let cool at room temperature for at least 30 minutes before cutting into squares.
