  • 4 2/3 cups Rice Krispies Cereal
  • 4 tablespoons salted butter
  • 10 ounces vegan marshmallows
  • 1 teaspoon peppermint extract
  • Green food coloring (about 10 drops)
  • 3/4 cup mini chocolate chips


Instructions

  1. Grease a large mixing bowl and pour in the Rice Krispies Cereal.
  2. In a medium-large saucepan over low heat, melt the butter.
  3. Stir in the vegan marshmallows until about three-quarters are melted; then remove from heat and mix until fully melted.
  4. Add peppermint extract and green food coloring to the mixture, stirring well.
  5. Pour the melted marshmallow mix over the cereal and combine until evenly coated.
  6. Allow to cool slightly for about 5-8 minutes before mixing in most of the chocolate chips (reserve some for topping).
  7. Spread into a greased 8-inch pan, pressing gently down, then sprinkle reserved chocolate chips on top.
  8. Let cool at room temperature for at least 30 minutes before cutting into squares.
