  • 8 ounces rotini pasta
  • 2 cups corn kernels (fresh, frozen, or canned)
  • 1/2 cup crumbled cotija cheese
  • 1/4 cup finely diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste


Instructions

  1. Cook rotini pasta according to package instructions until al dente. Drain and set aside to cool.
  2. In a skillet over medium-high heat, char the corn kernels for 5-7 minutes until slightly browned. Remove from heat and allow to cool.
  3. In a large mixing bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, smoked paprika, salt, and pepper until well combined.
  4. Add cooled pasta and corn to the dressing along with cotija cheese, red onion, and cilantro. Toss until evenly coated.
