Instructions

  1. Marinate the steak by combining olive oil, lemon juice, salt, pepper, and paprika in a bowl. Add the flank steak and let it sit for 15–30 minutes.
  2. Cook quinoa or couscous according to package instructions; set aside.
  3. Preheat your grill or stovetop grill pan over medium-high heat. Grill the marinated flank steak for 6–8 minutes on each side until desired doneness is achieved.
  4. Allow the steak to rest for about 5 minutes before slicing against the grain.
  5. In a bowl, mix cherry tomatoes, cucumber, bell pepper, red onion, and chickpeas; season with olive oil, salt, and pepper.
  6. Assemble by placing cooked quinoa or couscous in serving bowls topped with sliced steak and vegetable mixture.
