  • 1 lb boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 pita breads
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, thinly sliced
  • 1 cup plain Greek yogurt
  • 1/2 cup feta cheese, crumbled
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced


Instructions

  1. Marinate the chicken by mixing olive oil, oregano, garlic powder, salt, and pepper in a bowl. Add chicken thighs and coat well. Let sit for at least 30 minutes.
  2. Heat a skillet over medium-high heat. Cook marinated chicken for about 5–7 minutes per side until golden brown and cooked through (165°F).
  3. In another bowl, mix Greek yogurt, feta cheese, lemon juice, minced garlic, salt, and pepper until smooth to create the tzatziki sauce.
  4. Slice the cooked chicken into strips. Spread tzatziki sauce on pita bread and layer with chicken, cherry tomatoes, cucumber, and red onion.
  5. Roll up each pita tightly and serve.
