Ingredients
Scale
- 1-1/4 lbs boneless, skinless chicken thighs
- 1/2 cup gluten-free flour
- Salt and pepper to taste
- 2 tablespoons extra virgin olive oil
- 1 cup chicken broth
- 1/4 cup chopped pecans
- 3 tablespoons pure maple syrup
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 2 teaspoons gluten-free reduced-sodium tamari
- 1/4 teaspoon dried rosemary
Instructions
- Season gluten-free flour with salt and pepper in a shallow dish. Dredge each chicken thigh in the mixture and set aside.
- In a medium bowl, whisk together chicken broth, maple syrup, chopped pecans, Dijon mustard, apple cider vinegar, tamari, and rosemary.
- Heat olive oil in a cast iron skillet over medium-high heat. Sear chicken thighs until golden brown on both sides (about 2 minutes per side), then remove from skillet.
- Carefully add your Syrup alternative to the skillet (it will steam). Return skillet to heat, pour in the maple mixture, bring to a simmer, then return the chicken to the skillet. Cover loosely with foil and simmer until cooked through (about 10 minutes).
