  • 1/3 cup maple syrup
  • 2 large eggs
  • 1 1/4 cups mashed bananas (about 3-4 bananas)
  • 1 teaspoon vanilla extract
  • 1/4 cup plain yogurt
  • 3/4 cup walnuts or pecans


Instructions

  1. Preheat your oven to 350°F (180°C) and grease a 9×5-inch loaf pan.
  2. In a bowl, sift together flour, baking soda, and salt; set aside.
  3. In a stand mixer, cream softened butter and sugar until fluffy. Add maple syrup and mix.
  4. Mix in eggs one at a time, followed by mashed bananas and vanilla until combined.
  5. Gradually add dry ingredients to wet mixture along with yogurt; mix gently to avoid overmixing.
  6. Fold in most of the nuts while reserving some for topping.
  7. Pour batter into the prepared pan, sprinkle reserved nuts on top, and bake for 50-60 minutes or until a toothpick comes out clean.
  8. Drizzle warm maple syrup over the bread once out of the oven; let cool before slicing.
