  • 65 g chia seeds (6 tbsp)
  • ½ pink dragon fruit (blended)
  • 1 large Alphonso mango
  • Vanilla coconut yogurt


Instructions

  1. In a measuring jug, mix coconut milk, maple syrup, and vanilla extract. Stir in chia seeds and let set for at least four hours or overnight.
  2. Blend the chopped pink dragon fruit until smooth.
  3. Combine the pureed dragon fruit with the chia pudding mixture until well mixed.
  4. For mango coulis, blend diced Alphonso mango until smooth.
  5. Layer the pudding in serving cups with dragon fruit pudding first, followed by mango coulis, topped with vanilla coconut yogurt and chopped mango.
