  • 1 lb Chilean sea bass fillet
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp Creole seasoning
  • 5 tbsp butter
  • 12 oz fresh spinach leaves
  • 2 tsp minced garlic
  • 1/4 cup heavy whipping cream
  • 3 tbsp grated Parmesan cheese
  • 1/4 cup chicken broth
  • Zest and juice of 1 lemon
  • 3 tbsp all-purpose flour


Instructions

  1. Season the sea bass fillets with sea salt, black pepper, and Creole seasoning.
  2. In a cast-iron skillet, melt 2 tbsp butter over medium-high heat. Sear the fish for 3–4 minutes on one side until golden, then flip and cook for another 2 minutes.
  3. Transfer the skillet to a preheated oven at 400°F (200°C) and bake for 8–10 minutes until flaky.
  4. For creamed spinach, melt 1 tbsp butter in a separate pan, sauté minced garlic, add spinach until wilted, then stir in heavy cream, seasoning to taste.
  5. Prepare the lemon Parmesan sauce by melting 3 tbsp butter, whisking in 3 tbsp flour to make a roux, gradually adding chicken broth and cream while whisking until smooth. Stir in cheese, zest, and juice; simmer until thickened.
  6. Serve by placing creamed spinach on plates topped with sea bass and drizzled with lemon sauce.
