  • 4 1/4 cups all-purpose flour
  • 4 1/2 tsp instant dry yeast
  • 1 cup buttermilk
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 Tbsp fresh lemon zest
  • 1/2 cup unsalted butter
  • 2 cups powdered sugar
  • 1/4 cup fresh lemon juice


Instructions

  1. In a stand mixer bowl, combine warm buttermilk and yeast; let sit for five minutes until foamy.
  2. Add sugar, eggs, salt, butter, and half of the flour; mix on low speed. Gradually add remaining flour until a soft dough forms.
  3. Knead on medium speed for about five minutes until smooth. Cover and let rise in a warm place for one hour.
  4. Roll out dough into a rectangle (12×18 inches). Spread softened butter over it, sprinkle with mixed sugars and lemon zest.
  5. Roll up tightly from one edge and cut into twelve equal pieces using dental floss.
  6. Place rolls in a greased baking pan lined with parchment paper; let rise again for thirty minutes.
  7. Preheat oven to 350°F (175°C) and bake for twenty-eight minutes until golden brown.
  8. While baking, whisk together icing ingredients and drizzle over warm rolls before serving.
