- 4 1/2 tsp instant dry yeast
- 1 cup buttermilk
- 1/2 cup granulated sugar
- 2 large eggs
- 2 Tbsp fresh lemon zest
- 1/2 cup unsalted butter
- 2 cups powdered sugar
- 1/4 cup fresh lemon juice
Instructions
- In a stand mixer bowl, combine warm buttermilk and yeast; let sit for five minutes until foamy.
- Add sugar, eggs, salt, butter, and half of the flour; mix on low speed. Gradually add remaining flour until a soft dough forms.
- Knead on medium speed for about five minutes until smooth. Cover and let rise in a warm place for one hour.
- Roll out dough into a rectangle (12×18 inches). Spread softened butter over it, sprinkle with mixed sugars and lemon zest.
- Roll up tightly from one edge and cut into twelve equal pieces using dental floss.
- Place rolls in a greased baking pan lined with parchment paper; let rise again for thirty minutes.
- Preheat oven to 350°F (175°C) and bake for twenty-eight minutes until golden brown.
- While baking, whisk together icing ingredients and drizzle over warm rolls before serving.
