  • 1/4 cup ricotta cheese
  • 1/2 cup mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 1 tablespoon fresh thyme
  • Olive oil (for drizzling)
  • Honey


Instructions

  1. In a medium bowl, mix warm water, sugar, and yeast; let sit for 5 minutes until frothy.
  2. In a large bowl, combine flour and salt.
  3. Add the yeast mixture and olive oil to the flour; stir until a dough forms.
  4. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  5. Place in an oiled bowl, cover with a towel, and let rise in a warm place for 1 to 1.5 hours until doubled in size.
  6. Preheat oven to 475°F (245°C) with a pizza stone or baking sheet inside.
  7. Combine ricotta, mozzarella, Parmesan, lemon zest, and juice in a bowl.
  8. Roll out the risen dough into a thin round shape (about 12 inches).
  9. Transfer dough onto parchment paper; spread cheese mixture evenly over it.
  10. Sprinkle with fresh thyme and bake for 10-12 minutes until golden brown.
  11. Drizzle with olive oil and honey before serving.
