Ingredients

  • 1 tbsp olive oil
  • Juice of 1 lemon
  • 1 tsp black pepper
  • 1 cup dry quinoa
  • 1 cup water or broth
  • 1 cup broccoli florets


Instructions

  4. Steam broccoli florets in a pot until tender, about 4 minutes. Drain well.
  5. Serve by plating quinoa as the base, topped with grilled chicken and steamed broccoli.
