Ingredients

Scale
  • 4 large eggs
  • 8 tablespoons unsalted butter
  • 6 tablespoons fresh lemon juice
  • Zest of 2 large lemons
  • 1 cup sugar
  • 10 ounces vegan marshmallows
  • 3.4-ounce package instant lemon pudding mix
  • 6 cups Rice Krispies cereal

Instructions

  1. Prepare a 9 X 13-inch baking dish with cooking spray to prevent sticking.
  2. In a saucepan over medium heat, melt 8 tablespoons of unsalted butter, then stir in lemon juice and sugar until dissolved. Add vegan marshmallows and mix until melted.
  3. Remove from heat and stir in instant lemon pudding and lemon zest. Fold in Rice Krispies until well combined.
  4. Press the mixture evenly into the prepared baking dish.
  5. In a mixing bowl, beat egg whites with cream of tartar until soft peaks form. Gradually add sugar until glossy stiff peaks form, then fold in vanilla extract.
  6. Spread meringue over the cooled Rice Krispies base, creating peaks for added texture.
  7. Bake at 350°F (175°C) for 10-15 minutes until golden brown. Allow cooling before cutting into squares.
