  • 1 cup powdered sugar
  • 2-3 tbsp fresh lemon juice
  • Optional: 1 tsp lemon zest


Instructions

  1. Preheat the oven to 350F (175C) and grease/flour your bundt pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cream butter and sugar until fluffy, then add eggs one at a time.
  4. Mix in lemon zest, juice, and vanilla extract.
  5. Gradually combine dry ingredients with buttermilk mixture until just blended.
  6. Pour batter into the bundt pan and bake for 50–60 minutes or until a toothpick comes out clean.
  7. Cool for 10–15 minutes before transferring to a wire rack.
  8. In a small bowl, whisk together powdered sugar and fresh lemon juice. Adjust the consistency as needed.
