Ingredients

  • 2 medium zucchini (sliced lengthwise)
  • 1 cup ricotta cheese
  • 0.5 cup shredded mozzarella cheese
  • 1 cup marinara sauce
  • 1 tsp dried oregano
  • Fresh basil (for garnish)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease an 8×8 inch baking dish.
  3. Layer half of the zucchini slices on the bottom of the dish.
  4. Spread half of the ricotta cheese over the zucchini.
  5. Top with half of the marinara sauce, followed by half of the shredded mozzarella.
  6. Repeat layers with remaining ingredients, finishing with mozzarella on top.
  7. Sprinkle dried oregano over the top and bake for 20-25 minutes until zucchini is tender and cheese is bubbly.
  8. Garnish with fresh basil before serving.
