  • 1 cup buttermilk
  • 2 cups all-purpose flour
  • 1 tsp baking soda

  • 1 cup shredded sweetened coconut
  • 1 cup chopped pecans
  • 8 oz cream cheese, softened (optional)
  • 1 cup (1 stick) unsalted butter, softened (optional)
  • 3-4 cups powdered sugar (optional)
  • 1 tsp vanilla extract (optional)
  • 2-3 tbsp milk, to adjust consistency (optional)


Instructions

  1. Preheat your oven to 325°F (165°C) and grease and flour your baking pan.
  2. In a large bowl, cream together softened butter and sugar until light and fluffy.
  3. Add eggs one by one, mixing well after each addition along with the vanilla extract.
  4. In another bowl, whisk together flour, baking soda, and salt.
  5. Gradually mix in the dry ingredients alternately with buttermilk until just combined.
  6. Fold in shredded coconut and chopped pecans.
  7. Pour batter into prepared pan(s) and smooth the top.
  8. Bake for 60-70 minutes for loaf pans or 70-80 minutes for bundt pans until a toothpick comes out clean.
