  • 4 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup dry apple cider vinegar (or additional broth)
  • 2 teaspoons fresh thyme (or 1 teaspoon dried thyme)
  • 2 teaspoons Worcestershire sauce
  • Salt and pepper to taste
  • 2 bay leaves
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Set your Instant Pot to 'Sauté' mode and heat olive oil. Season the beef chuck roast with salt and pepper, then sear it on all sides until browned. Remove and set aside.
  2. In the same pot, add sliced onions and cook until caramelized and golden brown. Stir in minced garlic and cook for an additional minute.
  3. Deglaze the pot with apple cider vinegar or additional broth, scraping up any browned bits.
  4. Return the roast to the pot along with beef broth, thyme, Worcestershire sauce, and bay leaves. Secure the lid and set to 'Manual' or 'Pressure Cook' on high for 60 minutes.
  5. Once done, allow for natural pressure release for about 15 minutes before carefully releasing any remaining pressure. Shred the beef using two forks and serve hot garnished with fresh parsley.
