Ingredients
- 4 boneless skinless chicken breasts
- 4 cups romaine lettuce, chopped
- 1 cup gorgonzola cheese (or dairy-free alternative), crumbled
- 1 cup slivered almonds
- 1 1/2 cups blueberries
- 1/2 cup dried cranberries or cherries
- 3/4 – 1 cup plain Greek yogurt (or dairy-free alternative)
- 2 tablespoons yellow mustard
- 2 tablespoons dijon mustard
- 2-3 tablespoons honey
- 1 teaspoon lemon zest
- pinch of kosher salt and ground black pepper
- 1/4 cup soy sauce (or tamari or coconut aminos)
- 2 tablespoons extra virgin olive oil (or avocado oil)
- 2 teaspoons garlic, minced
- 1 teaspoon lemon juice
- 1/8 teaspoon kosher salt
- 1/8 teaspoon ground black pepper
Instructions
- Prepare the dressing by mixing yogurt, yellow mustard, Dijon mustard, honey, lemon zest, salt, and pepper in a jar. Shake or whisk until combined.
- Marinate the chicken in a mixture of soy sauce, olive oil, minced garlic, lemon juice, lemon zest, salt, and pepper for at least 30 minutes.
- Grill chicken on medium heat for 4-5 minutes per side until cooked through (internal temperature reaches 165°F). Allow to rest before slicing.
