Ingredients

Scale
  • 2 and 1/4 tsp active dry yeast
  • 2 tbsp brown sugar
  • 1 and 1/2 cups warm water
  • 4 and 1/2 cups flour
  • 1/4 cup olive oil
  • 2 tsp salt
  • 6 cups water (for boiling)
  • 2 tbsp baking soda (for boiling)
  • 1 egg (for topping)
  • coarse salt (for topping)
  • everything but the bagel seasoning (for topping)

Instructions

  1. In a stand mixer bowl, combine warm water, yeast, and sugar. Let sit for 5-10 minutes until foamy.
  2. Add flour, olive oil, and salt. Knead on low speed for about five minutes until the dough is smooth.
  3. Drizzle olive oil over the dough in a bowl, cover with a damp cloth, and let rise for an hour.
  4. Divide the dough into 12 pieces and shape each into a rope, then twist into a pretzel shape.
  5. Preheat your oven to 450°F (232°C). Boil water with baking soda; dip pretzels for 15-30 seconds.
  6. Place on parchment-lined baking sheets, brush with egg wash, sprinkle toppings, and bake for 10-11 minutes until golden.
