  • 3 tbsp plant-based butter
  • 7 cups popped popcorn
  • 1 tsp vanilla extract
  • 1 scoop cake batter protein powder (optional)
  • 50 regular size vegan marshmallows
  • Funfetti sprinkles


Instructions

  1. Pop your popcorn using your preferred method until you have about 7 cups ready.
  2. In a large saucepan, melt the plant-based butter over low heat. Once melted, add the vegan marshmallows and stir until fully melted and smooth.
  3. Remove from heat, stir in vanilla extract and protein powder (if using), then pour the mixture over the popped popcorn. Gently toss until evenly coated.
  4. Add Funfetti sprinkles to the mixture and toss again to distribute them well.
  5. Transfer the mixture into a parchment-lined baking dish or sheet pan. Press down firmly with a spatula or your hands (lightly sprayed with cooking spray) to form an even layer.
  6. Allow to set at room temperature for about 30 minutes before cutting into squares or breaking into clusters.
