- 1 cup all-purpose flour
- 1/3 cup granulated sugar
- 1/2 tsp coarse Kosher salt
- 1/2 tsp vanilla extract
- 1/2 cup cold unsalted butter
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 1/2 cup semi-sweet chocolate chips
- 2 tsp vanilla extract
- 2 large eggs
- 2/3 cup unsweetened Dutch-processed cocoa powder
- 1/3 cup all-purpose flour
- 1/4 tsp coarse Kosher salt
- 1-2 tsp instant espresso powder (optional)
- 4 oz good-quality dark chocolate
- 4 oz heavy whipping cream
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×9 inch baking pan by greasing it or lining it with parchment paper.
- For the shortbread base, mix flour, sugar, salt, vanilla extract, and cold butter until crumbly. Press into the bottom of the prepared pan and bake for about 15 minutes until lightly golden.
- For the brownie layer, melt butter and chocolate chips together until smooth. Stir in sugar, vanilla extract, and eggs one at a time. Combine cocoa powder, flour, and salt; fold into wet ingredients until just mixed.
- Pour brownie batter over the baked shortbread layer. Bake for an additional 25-30 minutes or until a toothpick inserted comes out mostly clean.
- For the ganache topping, heat heavy cream until simmering and pour over chopped dark chocolate; let sit then stir until smooth.
- Once cooled completely, pour ganache over the brownies, spread evenly, and refrigerate for at least one hour before cutting into squares.
